Cod Fillets with Tofu, Salted Meat, and Luffa Squash
Salt and pepper the fillets, and then dip in a quick egg wash. Braise the fish in a broth or stock (I used a combination of chicken broth, sesame oil, and soy sauce) - I also cooked the meat and squash in the broth to give it flavor. Layer over cold tofu, and top with Hoisin sauce. Served with white rice on the side.
