This woman right here is one of my most favorite people in the world, Mrs. Gladys Arteaga. Mother of a childhood friend, she has been so loving and caring, almost like a second mom to me. And of course, I especially love her cooking. She makes the BEST Spanish rice!
Some tips she gave me when cooking for large parties: easy prep the night before, and stick it in the oven day of. Mrs. Arteaga was cooking for 15+ people and I watched her prep for only 30 minutes the night before. The next evening when I came over, she just popped everything in the oven, and poof, like magic!Cilantro garlic lemon baked chicken: ingredients were placed in a blender, and poured over chicken to marinate overnight.Some fresh mixed vegetables, and when all plated togethera lovely home-cooked meal. Nom! And that Spanish rice… gets me every time.
