My favorite Chinese dish is a good bowl of Chicken Cold Noodle. I always get a really bad craving for it wherever I go, but it’s not quite popular in non-Asian areas, or at least I haven’t found one place in Boston or London that has it. Instead of wasting time, searching for it, and getting laughed at (which one restaurant owner did in Boston), I decided to try my hand at it.

So basic ingredients are easy: shredded chicken (boiled chicken pieces), fresh cucumber, and Chinese noodles. The sauce was more tricky -

  • peanut butter
  • water
  • soy sauce
  • sesame oil
  • lots of garlic
  • ginger

I found some basic recipes online, but I didn’t have all the ingredients on a whim, but this one would be good to look back on. Did some concocting in a saucepan, really just mixed it all together until it looked right. I think I needed more soy sauce because it was a tad bit on the bland side (or maybe it was because I used organic wholenut peanut butter), but it tasted really close to the fix I needed. Will try again soon.
