New Chocolate Chip Cookie Record

Every holiday season, I make the one baked good I’m best at - classic chocolate chip cookies. In 2012, I set a new record: 172 cookies. All personally kneaded and baked with love.

TIP If your cookies come out a bit hard, leave it in an air-tight container with a piece of bread overnight. Bread has this amazing power of osmosis that keeps cookies moist. If you are storing/mailing cookies, the bread will help it stay moist for weeks!

Simple Roasted Delicata Squash Recipe

If you love squash as much I do, you must try Delicata Squash. It’s a seasonal squash only around in the Winter (so take advantage of it!) and rich in fiber and potassium. Besides how delicious it is, it is also so simple to make!

Roasted Delicata Squash

What you need

  • Delicata Squash
  • Olive Oil
  • Salt
  • And baking pan!

Directions

  • Preheat oven to 425º
  • Half squash, scoop out seeds (you can roast/eat the seeds if desired), and cut into 1/2” slices
  • Place slices in baking pan and coat with about 2 tbsp of olive oil
  • Salt lightly
  • Roast for 10-15 minutes, then gently turn slices onto other side; roast until desired brownness!

When working 40+ hour weeks, sometimes we can’t help but resort to quick/pre-prepped meals…

TIP: If you are having one of those weeks, one way of making easy meals taste better than pre-packaged “blah” is throwing in some fresh ingredients to give it some flare!

Made boxed mac-and-cheese, but ripped up some pastrami and mixed it in - it was delicious! Get creative, and you’ll find that those extra minutes spent will be well worth it.

Fall Root Vegetable Hash

I have never cooked radishes before, but I figured radishes would taste really well with other root vegetables in a vegetable hash. I cut up the red radishes, carrots, and turnip, then simmered them in a chicken broth for the veggies to become tender. While the chicken broth was reducing, I added some coriander and rosemary to give it a fall flavor. Towards the end, I added some orzo - make sure to stir once in a while and ensure you have enough broth for the orzo to become al dente. Season with salt and pepper to taste.

I was surprised how easy and tasty the radishes were!
